Our Favorite Zucchini Muffins

- WET INGREDIENTS:
- 2 cups shredded zucchini
- ¼ cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup avocado oil (or olive oil OR melted butter)

- DRY INGREDIENTS:
- ½ cup white sugar
- ½ cup brown sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- Put all wet ingredients in a big bowl.
- Put all dry ingredients in a separate bowl.
- Stir both of them well.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Fill 12 muffin tins evenly.
- Bake at 350 degrees for 20 to 25 minutes.
