This is one of my all time favorite recipes and I’ve been making it forever!
You can make this recipe completely from scratch or buy already made ingredients and put it together a little quicker.
Basically this dip is three layers; One layer of refried beans, one layer of guacamole, and one of sour cream. Then add whatever toppings you want on top. There is a trick though!
Start the day before you make the dip…
Whether you make your own refried beans like this recipe…
or you open a can. Mix two tablespoons of taco seasoning into 3 1/2 cups or 1-30 ounce can of refried beans. The trick is to mix it up and let it sit in the fridge over night! The seasonings will blend and it will taste WAY better after sitting over night.
Here is my recipe for homemade taco seasoning that works GREAT in this recipe.
Now, after the beans and seasonings have sat over night spread the beans in the bottom of a 2 quart casserole dish.
The next layer is guacamole. Here is my recipe for homemade guacamole (sooo good!).
Next is a layer of sour cream. I use about 1 1/2 cups of sour cream but this recipe does not have to be precise.
Now, the really good stuff goes on top. Grated cheese (cheddar or pepper jack) sliced olives, sliced green onions, sliced jalapenos, diced fresh tomatoes or whatever sounds good to you!
It’s ready to serve with corn chips!
