It’s that time of year! Pumpkin everything!

Pumpkin Chip Bread

This was a recipe I had posted on my old blog six years ago, but every fall I bring it up so we can make this yummy bread!

You can also make it into muffins if you prefer. Just put the batter into 12 greased muffin tins and bake at 350 degrees for 20 to 25 minutes.

This recipe calls for a teaspoon of pumpkin pie spice, here is a link to my “Homemade Pumpkin Pie Spice” in case you don’t have any on hand!

Pumpkin Chip Bread

Ingredients
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 3 eggs
  • ¼ cup plain Greek yogurt
  • ¾ cup butter - melted
  • 1 cup all purpose flour
  • ⅔ cup whole wheat flour
  • 1 cup sugar
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon Pumpkin Pie Spice Mix
  • 1 cup chocolate chips plus ¼ cup for sprinkling on top
Instructions
  1. In a mixer or large bowl combine the pumpkin, vanilla, eggs, butter and yogurt. In a separate bowl stir together flours, sugar, salt, baking powder & soda, and Pumpkin Pie Spice mix. Pour dry ingredients into the mixer and blend well. Fold in the 1 cup of chocolate chips. Grease a loaf pan, pour batter in and sprinkle remaining chocolate chips on top. Bake at 350 degrees for 60 to 75 minutes.

Two years ago on our anniversary we planted a couple cherry trees, since then we have planted apple, pear, apricot and plum!  Our only regret is that we didn't plant them 10 years ago.🤨 The waiting game is no fun!😂

Instagram post 2322739455946934855_2218172047 I don't know why God allows bad things to happen sometimes?  Doesn't it seem that the bad things come in waves?  This past weekend had me asking, why?....A LOT.  We said goodbye to Pilot on Friday.  His kidneys just gave out on him and it was time.  Heart wrenching, would describe that whole day.  Then, a simple Sunday test drive in Dusty's new car turned bad, very bad.  Jess, Dusty and Jason all (eventually) walked away, but those three minutes that it took me to get from the house to the wreck, took 10 years off my life.  I never want to do that again! 
I don't know why any of this had to happen, but I do know that Pilot is not in pain anymore and he will never have another bad day.  I know my son and husband are alive, only because God is good!  God has a plan and I won't even pretend to know what that is or how he will use us to bring about His will.  Things are crazy right now EVERYWHERE and we tend to see the bad, but God is at work and like my very wise mom told me yesterday, "God is doing 10 million things and we only see 3". I'm thanking God today for His protection and His plan!❤ Be safe everyone and hug your husband and kids.❤❤❤ #godisgood

Instagram post 2299153042517523278_2218172047 That guy, the one on the left with his head buried in the ground.  He went to the vet on Tuesday.  Dispite a small infection on his nose from a gopher bite, he is great!  Our veterinarian can't believe how well he's doing and even said he's a miracle!  His kidneys are functioning better and all but one of his symptoms of kidney failure are gone!  She even asked us for the homemade dog food recipe we've been using.  If you are interested in making homemade dog food I put the recipe on my stories today and added it to our highlights for future reference!
