Some years back I inherited all of my Grandma’s cookbooks and recipes. There were THOUSANDS of hand written recipe cards lovingly made by her and other friends and family! I love looking through them and seeing her hand writing, and she always made sure to write the name of the person that gave her the recipe on the card. I have found some that my mom had given her decades ago, as well as my other grandma, and countless aunts and cousins!
My grandma was a great cook and I have many fond memories of helping, or just sitting at the kitchen table and watching her cook. To this day I CANNOT get my coleslaw to taste like hers, even though she let me watch her make it several times. She insisted there was no “recipe” she just threw it together. (so frustrating! lol) Now that I’m older and have been cooking for my family for many years I can understand what she meant by just throwing it together and not having a recipe. I make MANY meals that are simply “thrown” together.
This recipe is one from her collection. They’re pretty darn yummy and they feed a crowd!
I only changed a couple things when I made ours. I used butter instead of shortening and the coconut was unsweetened.
I think grandma would be very pleased to know I love using her collection of recipes as often as I do!
- 1 cup softened butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- ½ teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups rolled oats
- 2 cups corn flakes
- 2 cups coconut
- Cream softened butter and sugars.
- Add eggs and vanilla and mix.
- Add sifted dry ingredients (flour, baking soda and salt) plus oats, corn flakes and coconut; mix well.
- Preheat oven to 350°F
- Roll into balls from a heaping tablespoon full and flatten with a fork on the cookie sheet about 2 inches apart.
- Bake for 10 to 12 minutes.
I haven’t tried it yet but I think butterscotch chips would be wonderful in these cookies!
