Chicken Salad Wraps

We are on to day 3 of our summer kick off week of potluck/picnic recipes. This just might be my favorite recipe this week! These amazing chicken salad wraps are a PERFECT picnic food!

For one week at the end of August every year for the last 27 years my mom has packed up a trailer or motor home and camped out at our county fair. She stays there with her kids and grand kids while they spend a fun week showing and caring for the animals they entered at the fair. It’s an exhausting week, and one thing you don’t want to have to worry about is food, but you also don’t want to spend a fortune buying “fair food” all week. For the past 15 years or so she has been making a HUGE batch of this chicken salad and keeping it in the fridge in the trailer for a quick lunch. It takes about 30 seconds to slap some chicken salad on a tortilla and head back out to go show a pig, or lamb or chicken or duck…..like I said, it’s a busy week! The best part is that it’s sooooo goooood. The crunch of the almonds and celery, and the sweetness from the grapes is just perfection! Whether you are going on a picnic or to the fair or just staying home, you should totally go make this….right now!

You will need: 4 cups of cooked chicken cut into bite sized pieces (I used a rotisserie chicken), 1 cup of grapes halved, 1/2 cup sliced almonds, 1 cup chopped celery, 2 green onions sliced, 3/4 cup mayo (here’s my homemade mayo recipe), 1 tablespoon of lemon juice, 1 tablespoon Dijon mustard, 1/4 teaspoon salt, 1/4 teaspoon celery salt (here’s my homemade celery salt recipe), pepper to taste, and large tortilla wraps.

This recipe really doesn’t need much of an explanation once you have all the ingredients cut, halved, sliced, chopped and measured out…

you just throw it all together and stir it up.

This is delicious in a burrito size tortilla, but it is also great on a croissant, in a sandwich, or just eat it with a fork….yumm!

Ingredients
  • 4 cups of cooked chicken cut into bite sized pieces - rotisserie chicken works great
  • 1 cup of grapes halved (green or purple)
  • ½ cup sliced almonds
  • 1 cup chopped celery
  • 2 green onions sliced
  • ¾ cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon celery salt
  • ground pepper to taste
  • large tortilla wraps
Instructions
  1. cut the chicken into bite sized pieces
  2. halve the grapes
  3. chop up the celery
  4. slice the onions
  5. Measure out the rest of your ingredients and put everything into a large bowl.
  6. Stir it all up
  7. Wrap some chicken salad in a large tortilla.

This will make 5 or 6 large wraps.

We're together, we have uninterrupted conversation and we usually eat at some point.  I think that qualifies as a date! Probably the only good thing about Jess's degenerative spinal issues and most Dr's being 2 hours away!  We will have lots of dates in 2020! 😍❤
