I’ve been a little obsessed with my cast iron skillets lately. I think they’ve become the most used items in my kitchen! When I discovered that my bigger skillet is the right size to use for any recipe that bakes in a 9×13″ baking pan….well, lets just say everything is round now: casseroles, puff pancakes, meat loaf and giant cookies!
This is my favorite chocolate chip cookie recipe and this was a fun and EASY way to make them!
- 1 cup butter (softened)
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups oatmeal
- 1 to 2 cups semi sweat chocolate chips (depends on your preference)
- Preheat oven to 350°
- Cream together the softened butter and sugars.
- Thoroughly mix in the eggs and vanilla extract.
- In a separate bowl combine the flour, baking soda baking powder and salt.
- Stir the flour mixture into the butter and sugar and mix well.
- Stir in the oatmeal and chocolate chips.
- Put all the dough into a greased 12 to 14 inch cast iron skillet.
- Bake for 20 to 30 minutes.
The pictured cookies were made with 1 cup of chocolate chips and baked for 30 minutes in a 13.25″ cast iron skillet.
So, you don’t have a skillet or you’re just hankering for a good old fashioned regular size chocolate chip cookie….no problem! Just mix up the dough and heat the oven to 350°. Drop spoonful’s of dough onto a cookie sheet about 2 inches apart and bake for 12 to 15 minutes.
