The jalapeno peppers have been VERY abundant in our garden this year!  We love the flavor of a jalapeno but not necessarily all the heat that come with them!  We have learned to grow the mild kind along with the hot kind and a mixture of the two is PERFECT for us.

This is one of our favorite ways to prepare jalapenos!

Cut up 4 slices of bacon in to small pieces.

Cook the bacon in a small cast iron skillet (I used my 8 inch skillet) or any other oven proof pan.

Drain the bacon bits on a paper towel lined plate.

Slice your jalapenos and saute them in some of the bacon grease. (seeds in or out depending on how hot you want it)

While those are sauteing, stir together softened cream cheese, sour cream and taco seasoning.

When the jalapenos start to turn brown, take the skillet off the heat and stir in the cream cheese mixture with the bacon bits.  Spread your dip around in the bottom of the skillet.

Grate cheese and sprinkle on top.

Put the oven proof skillet in the oven at 350 degrees until the cheese is melted and the dip is heated through.  This will take between 5 and 10 minutes.  Sprinkle with fresh chives if you like and grab the corn chips!

This is a pretty small recipe, so if you are feeding a crowd make sure to double or triple the recipe and use a bigger skillet!

Jalapeno Popper Dip in a Cast Iron Skillet

Ingredients
  • 4 slices of bacon cut into small pieces
  • 1 cup sliced jalapeno peppers. You can keep the seeds or remove them depending on the amount of heat that you want. Seeds add heat!
  • 1 - 8oz package of cream cheese softened
  • ½ cup sour cream
  • 1 teaspoon taco seasoning
  • ½ cup shredded sharp cheddar cheese
  • Corn chips for dipping!
Instructions
  1. Cook the bacon pieces in a small cast iron skillet over medium heat.
  2. Drain bacon bits on a paper towel lined plate.
  3. Leave a little bacon grease in the skillet and saute the sliced jalapenos in the bacon grease.
  4. While the peppers are sauteing, mix the cream cheese, sour cream and taco seasoning together in a separate bowl.
  5. When the peppers are a little browned remove them from the heat and stir in the cream cheese mixture and the bacon. Spread the dip in the bottom of the skillet.
  6. Sprinkle the cheese on top.
  7. Bake in a 350 degree oven for 5 to 10 minutes, until the cheese is melted and the dip is heated through.
  8. Serve with corn chips.
